Polenta & Pizzoccheri

Come and spend a lovely morning in Como learning how to cook a Traditional Northern Italian Family Lunch.

Classes take place in Katie’s beautiful home in Lake Como, we will use local ingredients to prepare “Pizzoccheri” – garlic butter, Valtellina cheese, Potatoes, Swiss chard and handmade buckwheat fresh pasta (a naturally gluten free grain).

We’ll begin with an appetiser consisting of warm Polenta Crostini served with a red wine sausage ragu and ‘Stracchino’ cheese.

To follow we will prepare the traditional northern Italian dish, Pizzoccheri, This is traditionally served in the mountain retreats above Lake Como. It consists of a handmade pasta using local Saraceno flour and water, then is cooked and dressed with local cheeses, potatoes & Swiss chard. After that, we’ll learn to make a delectable seasonal Gelato for dessert Gelato.

Once our work is done, we’ll sit down to savour our creations with some local wines and unwind. Come and immerse yourself in Italian cooking and culture.

Warm Crostini di Polenta

Pizzoccheri alla valtellinese, handmade pasta with local buckwheat flour, cooked gently with potatoes, Verza greens, butter and Valtellina Cheeses. This dish has to be savoured with the perfect glass of Valtellina red wine!

Dolce

Seasonal Fruit Gelato, hand made using fresh seasonal fruit. Served with 70% cocoa Swiss dark chocolate sauce and toasted almonds.
