Tuscan Salad with cheese from the Appennini mountains

The weather has turned hot here in Como all of a sudden so it’s time for fresh salads for lunch.

After a long row on the lake, against the wind this morning, I was starving by the time I got home. This salad was just what I needed.

The main ingredients are :

  • Valeriana Salad
  • Pears
  • Walnuts
  • Fresh Latte Vaccino cheese
  • Lemon juice
  • Olive oil

Place the Salad in a serving bowl.

Thinly slice the pears into nice circular slices across the pear (leave their skin on).

Cut cheese into thin slices.

Arrange on top of the salad & dress with lemon juice and olive oil.

Goes perfectly as light lunch accompanied by fresh Pane di Farro.
