Fun cooking classes in Katie’s beautiful home in Como, Italy. We offer many different classes:

Our Cooking Classes are a fun & unique way to experience the wonderful local Italian Cuisine. Classes are hands on, in small groups,  where you will learn the secrets of how to prepare wonderful Italian dishes and desserts.

Our Classes

Private Cooking Classes are for 2-8 people. Classes are for all ages, children especially enjoy making their own fresh Pasta or Pizza by hand & learning to make Gelato for dessert is usually a real hit with family groups. Our Cooking classes take place during the morning and last 4 hours in total.

What kinds of cooking classes do we offer?

We like to work directly with our clients to create a personalised menu using fresh local seasonal ingredients and traditional recipes for your class.
Here are just a few of the types of cooking classes we run:


Pizza Making

Our Pizza and Gelato Cooking Classes are a unique way to experience the wonderful local Italian Cuisine. Classes are hands on where you will learn the secrets of how to prepare wonderful home made Italian dishes.

We will learn how to :

• Prepare a wonderful slowly leavened organic dough
• Look after and maintain a sourdough starter
• Use the leaven to prepare your sourdough pizza bases
• Mix, knead and stretch the dough
• Cook first class pizza in a domestic oven

We use only the best Italian tomatoes, fresh mozzarella and fresh Italian Herbs from our garden. After we have made the traditional Neapolitan pizzas we will create pizzas using cheeses and seasonal ingredients from our local producers, inspired by regional flavours, such as; “Valtellina Casera Cheese with fresh sage and thinly sliced zucchini “or “Gorgonzola, Pear and crumbled walnuts”.

We will also have fun making a seasonal Italian Gelato for dessert, such as Fig & Honey, Italian Pear, Raspberry or Strawberry.

Our classes are bespoke for each private group, we create a menu to suit your groups needs and of course we try to accomodate any allergies or food preferences.

Pasta

Our Pasta and Gelato Cooking Classes are a unique way to experience the wonderful local Italian Cuisine. Classes are hands on where you will learn the secrets of how to prepare wonderful home made Italian dishes.

We will learn how to :

• Prepare a wonderful organic fresh egg pasta dough
• Mix, knead and stretch the dough by hand
• Use the dough to prepare traditional Tagliatelle & Ravioli
• Make Ravioli filling using fresh ricotta and herbs
• Create beautiful seasonal Italian sauces for the pasta we create

We will also have fun making a seasonal Italian Gelato for dessert, such as Fig & Honey, Pear, Raspberry or Strawberry.

Como Lake Cuisine


Katie will show you how to prepare some delicious Como specialities. We’ll begin with Crostini di Polenta, an appetiser consisting of Hand made Polenta crostini with traditionally-made cheeses and hams sourced from the region. For our main dish we will prepare, Risotto al Persico, using local Carnaroli rice, Perch fillets from lake Como, infused with white wine and broth. After that, we’ll learn to make a delectable dessert to follow it, Sorbeto di Pesca, sorbet using fresh Italian peaches, topped with cream and crushed amaretto biscuits.

Gelato


It is Italy’s favorite dessert! We often combine Gelato making with our Pizza and Pasta cooking classes & Lunch, but if you are a true Gelato fan and want to spend a heavenly 2 and a half hours making and tasting Gelato then this is the class for you!
This can be run as a stand alone class without lunch to fit into your busy travel schedule.
During the Gelato class we will learn how to prepare the three classic Gelato bases of Italian Sorbetto, Fioridilatte and Custard base Gelati.

Classes run from 9:30 am until 12.
We will discuss how to choose the very best ingredients for Gelato, and then prepare 4 different flavours of gelato, for example:

  • Dark Chocolate Gelato
  • Sicilian Cassata Gelato
  • Italian Lemon Gelato
  • Fresh Strawberry Gelato
  • Summer Peach & Amaretti Gelato
  • Stracciatella Gelato (Chocolate Chip)
  • Fig, Honey and greek Yogurt Gelato
  • Strawberry Shortcake Gelato
  • Hazelnut Gelato
  • Pistacchio Gelato
